Anti-inflammatory diet

Easy trail mix with toasted coconut flakes and tropical dried fruit or chocolate trail mix recipe

Coconut flake trail mix that can be enjoyed alone or with tropical dried fruit or chocolatey add ons.

If desired spirnkle coconut with a little brown sugar or coconut sugar prior to baking

2 cups mixed nuts such as macademia nuts, cashews, almonds, brazil nuts

1/3 cup coconut flakes

Optional: 1/2 tsp coconut sugar

Sea salt

Preheat oven to 325 degrees. Place the nuts in a single file on a lined baking sheet and if desired sprinkle with sea salt. Bake for 4-6 minutes. Add coconut flakes, if desired sprinkle with coconut sugar or brown sugar, and bake another 5-8 minutes, checking after five minutes so they dont burn. Take out of the oven and cool. If not using coconut bake nuts for about 10-14 minutes or til golden brown.

If desired stir in chopped dried pineapple or dried chopped mango or dried cherries or cranberries and/or dairy free/vegan semisweet/dark chocolate chips or chunks.
