Easy dairy free coconut pudding and chocolate pudding

Some people don’t like full-fat coconut milk and though I love coconut, I totally get it- I cannot eat undiluted coconut milk straight from the can as its too rich. But somehow with just a simple change up to the ingredients the consistency changes and full-fat coconut milk becomes so delicious as a creamy dairy free pudding! Make this recipe as a dairy free Hawaiian Haupia coconut pudding or chocolate pudding with hidden coconut milk!

Dairy free Hawaiian haupia coconut pudding

Here I happened to change it up and top the Hawaiian Haupia coconut pudding with dried cherries, coconut flakes and a nutella-like chocolate spread as a gift for someone, but it pairs well with fruit, especially tropical fruit like pineapple, mango, kiwi, berries etc, as they pair with the hawaiian coconut theme. plus top with shredded coconut or see this recipe for toasted coconut.

Ingredients:

  • 1 can full fat coconut milk,
  • 2 2/3 tbsp arrowroot starch (or tapioca starch/corn starch, with corn you may need a tiny bit less starch as it may hold a little firmer)
  • tsp vanilla extract or scraped vanilla bean, or coconut extract
  • 3-4 tbsp sugar, monk sugar or coconut sugar (coconut will turn it a bit brown and caramely) (keto sub pinch of stevia)

Recipe:

Add coconut milk and starch to saucepan over Medium heat, stirring often,cook a few minutes until it thickens, stir in sugar to taste. pour into cups or bowls. If desired while warm dust in coconut sugar.

let it cool to thicken as it cools. Though i get impatient and like it a little warm too.

Dairy free Chocolate pudding variation: while hot stir in 2-4.5tbsp cacao/cocoa pdr (to taste) and coconut sugar or maple syrup to taste, less cacao for milk chocolate and more for dark chocolate, the more cocoa you add the more sugar you’ll need as cocoa is bitter.
