The best massaged kale salad with pomegranate balsamic dressing recipe

This pomegranate bejwelled kale salad is as delicious and juicy as it is stunning and nutritious (with calcium rich kale and antioxidant rich pomegranate).

This is hands down the best kale salad and best kale salad dressing ever and so easy to make!

Confession, I hated kale and kale salads until now! But i could eat the whole plate of kale salad when made in this delicious way with an easy healthy pomegranate balsamic dressing, no blender needed. and taking the extra step to massage the kale is makes it softer, tastier and easier to digest too. Kale is also a good source of calcium other than dairy. And the pomegranate seeds add juiciness, flavor and antioxidants.

Easy Pomegranate dressing recipe:

3/4 tbsp balsamic vinegar (a whole sppon can be used if you like it more vinegary and love balsamic oil vinaigrettes)

1 tbsp pomegranate paste or pomegranate molasses (a little more can be added to taste. get it from Persian and international markets, its inexpensive) (i imagine another sweetener like maple syrup can be subbed but will not have pomegranate taste)

2.5 tbsp olive oil*

Sea salt

Mix everything together in a small bowl or jar.

*if making this dressing for other greens, add another 2-2.5 tbsp olive oil. I used less oil in the dressing as the kale is massaged in lots of oil and I don’t want the olive taste to override the dressing flavor.

Massaged Kale salad with pomegranate airils:

Few bunches of Kale, tough stems removed, chopped small

Generous olive oil for massaging the kale

Sea salt

One pomegranate, seeded

Optional, Toasted sesame seeds, garnish

Pour oil and sea salt over kale, massage kale with hands for 5 minutes to soften it up and make it easier to digest and more pallateable. Drizzle with pomegranate dressing and mix well. Garnish with pomegranate (the juicy star of this salad) and toasted sesame seeds.

  1. Thanks for following my blog! I do eat dairy and obviously meat! But I am always interested in people who are into and cooking with good whole food. And I see you have keto options, so will take a look at them along the way. Especially around the holidays and in the summer, I move into keto from carnivore. Nice blog.
