Dairy free coconut eggnog recipe

I love this coconut eggnog more than classic eggnog with eggs, and because its eggless it can even be served warm as an eggnog chai drink!

Tis the festive Christmas season and with it come delicious holiday recipes like homemade eggnog. This coconut almond milk eggnog is delicious and simple! I made this nog eggless so its a vegan “egg”nog that’s also paleo as its soy free. And of course its dairy free and lactose free eggnog recipe.

Common questions:

can you drink eggnog while pregnant or before driving? yes with the virgin coconut nog version which is eggless (no raw eggs) and alcohol free, you most definitely can! Is eggnog good for you? what does eggnog have in it? well this eggnog has nothing but healthy ingredients. traditionally its made either with raw eggs and dairy or storebought cartons are made with plant milk or regular milk and cream plus sugar, flavors and preservatives. but this eggnog is lactose free/dairy free and made without raw eggs and instead its full of healthy fats from coconut milk and almond milk so yes this is a healthy version yet with the same or better taste thanks to all the delish eggnog spices!

is there alcohol in eggnog? if you want there to be, then yes, I like my eggnog a little spiked, but its delicious without alcohol too! you don’t need to add much, just a splash of booze for flavor (unless you want to feel a buzz of course!)

You can make this homemade eggnog recipe with alcohol as an eggnog cocktail or without alcohol for a virgin healthy nog to enjoy anytime. if you weren’t sure what liquor to mix with eggnog, dark rum works beautifully in this coconut eggnog. Its so easy to make, the eggnog ingredients are a few spices, coconut mik for creaminess and almond milk to thin it out a little.

The most delicious eggnog recipe and its made without eggs, dairy, refined sugar, soy, or artificial flavours!

I am showing three ways to make this nog depending if you want it to be a spiked eggnog, and are using a Thai Kitchen carton* (which has full fat coconut milk that doesn’t seem to seperate into cream, so more can be used without it getting too rich) or a virgin eggnog using canned coconut milk. Im also adding a hot eggnog variation since this is an eggless eggnong and i like hot chai eggnog like drinks in the winter.

method 1 for coconut nog:

Ingredients

1 cup full fat coconut milk, from a Thai Kitchen carton, shaken well

3/4-1 cup almond milk from a fridge carton (or more to desired consistencty to thin the full fat coconut milk out)

splash or two of dark rum (if omitting this add more almond milk to thin out the coconut)

1/4 tsp ground cinnamon, more for sprinkling at end

1/4 tsp nutmeg

pinch of ground cloves or mace

optional, cinnamon stick and star anise pod (star anise adds subtle licorice flavor thats delish in eggnong and refreshing in coconut milk)

few vanilla stevia drops or a drop of vanilla extract and 2tbsp maple syrup to taste

optional add on for variation: a pinch of ground cardamom

Directions

mix all the ingredients together and chill in the fridge overnight to infuse the flavor. in the morning strain out or scoop out the star anise and cinnamon stick and blend all in a blender to seperate the coconut. if desired pour ice into cups prior to pouring in nog.

How to “frost” the rim of the glass in shredded coconut and sugar: (updated way to frost it: dip rim in maple syrup on a plate then dip in shredded coconut). old way worked and the sugar crystal looked like frost as in pics, but the previous way is better for sticking more on! old way: scatter granulated sugar (regular sugar) and shredded coconut on a plate. put water in a shallow bowl and dip the top of the glass in the water and then the sugar and coconut. pour in eggnog and garnish with ground cinnamon, mace and nutmeg and a cinnamon stick.

Optional, add a sprinkle of freshly grated nutmeg for amazing taste if you have fresh nutmeg for topping you can slightly reduce ground nutmeg

method 2 (virgin eggnog using a can of coconut milk):

Ingredients

1.5 cups almond milk from a fridge carton

1/3 cup canned coconut milk, top solid cream part only (omitting any oil that forms at the very top to avoid lumpiness)

3 drops vanilla extract, approx 1/2 tsp

2 tbsp maple syrup (more or less to taste)

1/4 tsp cinnamon, plus extra for sprinkling

1/5 tsp nutmeg

pinch of ground cloves or mace

1 star anise pod

1 cinnamon stick

optional pinch of cardamom for a chai nog flavor

Directions

mix the ingredients together and chill overnight with a star anise pod and cinnamon stick to infuse the flavor. in the morning strain out or scoop out the star anise and cinnamon stick and give it a good shake or if needed, blend all in a blender to seperate the coconut. sometimes when coconut is chilled it needs to warm up a bit to become smooth as chilling seperates it.

to frost the rim of the glass in shredded coconut and sugar: scatter granulated sugar (regular sugar) and shredded coconut on a plate. put water in a shallow bowl and dip the top of the glass in the water and then the sugar and coconut. pour in eggnog and garnish with ground cinnamon, nutmeg and mace and a cinnamon stick.

Optional, add a sprinkle of freshly grated nutmeg for amazing taste if you have fresh nutmeg for topping you can slightly reduce ground nutmeg inside the nog

can you drink eggnog hot as a warming eggnog latte-like drink? yes you can drink warm eggnog if its an eggless eggnog (you wouldn’t want to cook the eggs!). for the hot eggnog drink variation see below

hot eggnog variation: since this eggnog is eggless you can make it a hot warming drink rather than a cold one. Rather than blending in a blender, place the milk, cinnamon stick, star anise and other ingredients (cardamom is lovely here as chai nog) except rum in a saucepan and warm, stirring once in a while, take off the heat and, if using, stir in rum. This will also help infuse the flavor. if you have leftovers in the fridge you may need to blend to seperate the coconut (remove the cinnamon stick and star anise prior to blending).
