Now we may not have gringers but we do have beef bones to make this healthy beef bone broth with.

Normally making homemade bone broth on the stove top requires leaving it to cook for 48 hours and in today’s day most people neither have the time to attend to a pot safely for that long, nor the space (bone broth stinks when cooking so if you have roomies in the living room aree and leave it going overnight they will not be happy). The high tech solution? Light speed Instant Pot Bone broth! Either as pressure cooked bone broth recipe or slow cooked bone broth recipe, both methods are given below. (Tip: do the pressure cooked method if you have the roomie issue!)

Whether you are a Star Wars fan or not you are sure to make a great pot of super healthy bone broth in your new Instant Pot to start the new year off healthy! Its also a great meal prep idea as you can keep mason jars of bone broth in the fridge or tupperware in the freezer so you always have healthy bone broth to sip on or cook meat with.

Ingredients

1.5 pounds beef soup bones like knucklebones, oxtails, shank bones

2 Large carrots has lengthwise and cut into 3 inch pieces

2 celery stalks, Chopped into 3 inch pieces

Large yellow onion chopped into wedges

Bay leaf

5 sprigs Thyme OR 1/2 cup fresh parsley leaves and stems

Salt and pepper

6 cups water, (plus more as needed when evaporated while sauteeing) if using bit more bones (pot cannot be over 2/3 full ie only fill it to maximum line for your size of instant pot)

Optional variations:

Add 1.5 tbsp Tomato paste or 1” piece fresh ginger and 3 cloves garlic

OR add a leek, 2tbsp tomato paste/puree, a few cloves, keep onion carrot celery thyme and bay leaf

Directions

Optional extra step of roasting the bones first for deeper flavor: Preheat oven to 450°F. Place bones on a roasting pan and roast for 20 minutes. Stir and roast until a deep browned, approx 20 minutes more. Move bones and any juices to the pot

Select Saute on your Instant Pot, add water to the bones, bring to boil and simmer with water for 15 minutes then add veg and herbs. Add back the amount of water that evaporated.

Make sure release is set to Sealing to pressure cook. Pressure cook 115 minutes then let it naturally release for 45 minutes.

You can either skim and discard the fat at the top while in the pot or wait to do it after and either use a fat seperator or place in the fridge so the fat will solidify so you can scoop off top solid part and discard.

Pour broth into mason jars and let chill or put in an ice bath before refridgerating. Serve hot to make it sippable, either as soup or sip it like Baby Yoda from a mug (well ok I’m pretty sure Baby Yoda is using a small bowl like a mug).

Wearing heat resistant mitts, pre-strain using a slotted ladle then place a wire strainer/sieve over a large pot and carefully strain out bones and veg (I like to wait a bit so it’s not as hot as it can splash).

A cheese cloth helps further strain it if you want it super smooth.

Slow cooked method:

Optional extra step: Preheat oven to 450°F. Place bones, carrots, onion, and garlic on a roasting pan and roast for 20 minutes. Stir and roast until a deep browned, approx 20 minutes more. When moving the bones to the pot later add any juices form the pan.

Add 1/4 cup apple cider vinegar to the ingredients above, choosing your variation and using 1.5-2 lbs of bones (marrow on is a healthy choice) based on Instant pot size. (broth should be done in a standard size 6 qt or bigger Instant Pot so there is enough free room at the top).

Select the Sauté button and add bones and water, leaving at least an inch of space from the rim. Bring to boil and simmer with water for 15 minutes then add veg and herbs and slow cook for 6.5-12 hours or until marrow is cooked and starts seperating from bone (7.5 or longer for Instant Pot slow cooker as it is said to run slower than a regular slow cooker. Ideally a longer time is better to get the most out of the beef bones)

(Full disclosure: cooking bone broth stinks so if you don’t have a house I don’t recommend slow cooking it overnight if you or your roommates sleep in the same place near the kitchen- do the pressure cooked method for fast bone broth instead).

Skim the fat off the top of the bone broth unless you have a fat seperator to use after. Use heat resistant mitts to pull the pot out. Place a large sieve over a large pot and strain carefully. A cheese cloth helps further strain it if you want it super smooth. if desired toss marrow back into soup or eat seperately.

Pour into mason jars and after left for some time or put in an ice bath to chill, refridgerate.

Serve hot or Keep in airtight container in fridge for 3-4 days or freeze up to 6 months.

Optional variation: if you want your pressure cooked broth to gelatinize when chilled and have more collagen, take a cue from Binging with Babish, who inspired this movie themed recipe, and add a few collagen-rich chicken feet in the place of a few bones. Pressure cooking speeds up the process so adding chicken feet which are mostly made of collagen helps make sure that the broth is super collagen rich, but it is not necessary and I usually dont use them. In this case skim the fat off the top while in the pot rather than after refridgerating.

With all the health benefits of eating bone broth, may the force be with you in the new year!
